What Is Amaranth?
The Ancient Greeks called amaranth, ‘amarantos’ or ‘one that does not wither’, as the flowers retain their vibrant color even after dying. In India, it is consumed as a popular vegetable, and it’s more popular by the name of ‘Cholai’.
You can pop it like corn, grind it to a flour and even boil it like rice or pasta.

Studies On Amaranth:
Many studies on amaranth have not only confirmed its enormous nutritional potential, but also the efficacy of many phytochemicals like rutin, nicotiflorin and other peptides that have the ability to fight the symptoms of hypertension and even cancer.
Researchers have found that amaranth contains an important peptide called lunasin, which has also been recorded in soybeans and was previously thought to have properties that lower the incidence of chronic diseases like diabetes, inflammation, heart disease and stroke (11).
Cardiovascular disease or CVD is closely linked to high-blood pressure and high cholesterol. CVD has other known precursors like obesity, hypoglycemia, and diabetes. Increasing the amount of unsaturated fat in our diet helps prevent CVD. Amaranth has thus been found to be especially effective for CVD patients.
The study concluded that amaranth oil extract can also be used as a functional food product that prevents and treats cardiovascular disease (12).
