1. Traditional Deviled Eggs:

Ingredients:

  1. Eggs – 6, hard boiled, peeled, and halved
  2. Mayonnaise – ¼ cup
  3. Mustard – 1 tsp
  4. Pickled relish – 1 ¼ tbsp
  5. Salt – to taste
  6. Red pepper – to taste, freshly ground
  7. Sweet gherkins – for garnish
  8. Paprika – for garnish

Directions:

  1. Halve the eggs and take out the egg yolks using a small scooping spoon.
  2. Place the egg yolks in a mixing bowl and keep aside the egg whites.
  3. Using a fork, mash the yolks.
  4. Add mayonnaise, mustard, relish, salt, and pepper, and mix well.
  5. Divide the mixture into 12 equal portions and scoop into emptied egg white halves.
  6. Cover and refrigerate till you serve.

Ingredients:            

  1. Eggs – 6, hard boiled, peeled, and halved vertically
  2. Mayonnaise – ¼ cup
  3. Scallion – 1, finely chopped
  4. Parsley – 1 tbsp, finely chopped
  5. Sweet pickle – 1tbsp
  6. Mustard – 1 tsp
  7. Dill – ¼ tsp, freshly chopped
  8. Salt – to taste
  9. Garlic powder – ¼ tsp
  10. Red paprika flakes – ¼ tsp
  11. Black pepper powder – ¼ tsp, freshly ground
  12. Paprika – for garnishing

Directions:

  1. Slice the eggs carefully. Halve the eggs lengthwise.
  2. Take the egg yolks and place them in a bowl.
  3. Keep the whites aside.
  4. With a fork, mash the yolks.
  5. Add ingredients 3 to 11 and mix well.
  6. Fill the empty egg halves, garnish with paprika, and serve on a bed of salad greens.

Deviled egg is a versatile recipe and can be twisted to meet your palate requirements. This one is something I prepared for a birthday party. It comes packed with Indian flavors and a little bit of veggie for added richness.

Ingredients:

  1. Eggs – 7, hard boiled, peeled, and halved
  2. Potato – ¼ cup, mashed
  3. Carrot – 1, cooked, mashed
  4. Chaat masala – 1 tsp
  5. Red chili powder – ½ tsp
  6. Salt – to taste
  7. Onions – ¼ cup, finely chopped, and roasted to golden brown
  8. Coriander leaves – 2 tbsp, finely chopped, and divided
  9. Lemon juice – 1 tbsp, freshly squeezed

Directions:

  1. Halve the eggs lengthways, scoop out the yolks, and place it a medium sized mixing bowl.
  2. Roast onions till golden brown and add it along with mashed potatoes, carrot, red chili powder, half of the coriander leaves, chaat masala, and salt.
  3. Mix the ingredients to ensure even distribution of flavors. Mix in lemon juice.
  4. Divide the mixture into 14 equal portions.
  5. Fill the egg whites with the mixture. Garnish with red chili powder and coriander leaves, and then serve fresh.

  1. Eggs – 6, hard boiled, peeled, and halved
  2. Smoked salmon – 3 tbsp, finely minced
