  • 2 carrots
  • 4 tablespoons extra virgin olive oil
  • 6 tablespoons lemon juice
  • ¼ cup thinly sliced shallots

  • ¾ cup raw pistachios
  • 2 tablespoons honey
  • ¼ cup chopped frisée
  • ¼ cup chopped parsley
  • ½ cup halved grapes
  • Salt to taste

How To Prepare

  1. Use a vegetable peeler to shave the carrots into thin ribbons.
  2. Mix lemon juice, lemon zest, salt, and shallots in a bowl.
