1. Clear Vegetable Soup:

Preparation time: 25-30 minutes

Cooking time: 25-30 minutes

Servings: 4

Ingredients:

  • 1/4 cabbage

For Vegetable Stock:

  • 1 medium sized onion
  • 1 carrot
  • 1x 2 inches celery
  • 4-5 mushrooms
  • Salt to taste
  • Oil for frying

For Soup:

  • 1/4 cabbage
  • 4-5 mushrooms
  • 1/4 cup corn kernels
  • 1-2 heads pak choy
  • 4-5 florets broccoli
  • Salt to taste
  • Black pepper powder to taste

Method:

  1. To make the vegetable stock, use a non-stick pan to heat the oil. Dice onion and fry. Next, slice them and add to the pan. Slice the carrot and add it to the pan and saute on high flame.
  1. Now, finely chop leek and celery, cut mushrooms into quarters and add together and stir. Add salt and mix. Add a lot of water and boil for 30 minutes. Strain and keep aside for later use.
  1. Boil three cups of vegetable stock in another deep non-stick pan. Finely chop cabbage and add the mushrooms and corn to the vegetable stock. Tear pak choy into small pieces and add it to the stock.
  1. Add the cabbage and cook for three minutes. Lastly, add broccoli, salt, and pepper and allow it to boil for another two to three minutes. Remove from heat and pour into soup plates. Serve hot.

2. Mixed Vegetable Soup:

Preparation Time: 30-40 minutes

Cooking Time: 20-25 minutes

Servings: 4

Ingredients:

  • 1 medium-sized carrot, finely chopped
  • 1/4 medium-sized cabbage, finely chopped
  • 1 medium-sized potato, finely chopped
  • 2 medium-sized tomatoes, finely chopped
  • 1 tbsp butter
  • 1 medium-sized onion, finely chopped
  • 1 tbsp whole wheat flour
  • Salt and black pepper powder to taste

Method:

  1. Heat butter in a deep non-stick pan and add the finely chopped onion to it. Sauté till onions turn translucent. To this, add chopped cabbage, carrot, tomatoes and potato. Stir.
  1. Add the flour and cook on a medium flame. Keep stirring for about a minute or two.
  1. Add four cups of water and boil the mixture. Season with salt and pepper powder.
  1. Reduce the heat and let the soup simmer for about five to seven minutes, or till the vegetables have cooked entirely. Serve immediately.

3. Home-Style Mixed Vegetable Soup:

Preparation Time: 0-5 minutes

Cooking Time: 30-40 minutes

Servings: 4

Ingredients:

  • 2 medium-sized carrots, diced
  • 1 medium-sized potato, diced
  • 100 gm bottle gourd, diced
  • 4 medium-sized tomatoes, quartered
  • 1 tbsp oil
  • 1/2 teaspoon cumin seeds
  • 7-8 black peppercorns
  • 1 medium-sized onion, sliced
  • 1/2 tsp sugar
  • Salt to taste

Method:

  1. In a pan, heat one tablespoon of oil and add cumin seeds and black peppercorns. When the cumin seeds change color, add the sliced onion and sauté for two minutes.
  1. Now, add the diced potato, carrots and bottle gourd and stir. To this, season with salt and mix and add two cups of water, cover and continue to cook till almost done.
  1. At this stage, add tomatoes and keep cooking till all the vegetables are well-cooked. Strain and set the liquid aside.
  1. When the vegetables cool, puree them in a blender. Transfer the vegetable puree to a deep pan and to it, add the reserved liquid and check for a thick consistency.
  1. Boil the soup and check for salt. Add sugar and stir. Remove from heat and serve immediately.
