Packed with vegetables and flavored with green chilies, cumin seeds, and coriander leaves, this omelet makes a tasty breakfast option. I usually make this as an after school snack for my kid. For that extra crunch, add a teaspoon of roasted almonds. Ingredients:

  1. Egg – 2
  2. Onions – 1, small, finely chopped
  3. Tomato – 1, small, finely chopped
  4. Carrot – 1, small, peeled, finely grated
  5. Green chilies – 2, finely chopped
  6. Cumin seeds – 1 tsp
  7. Coriander leaves – 1 tbsp, finely chopped
  8. Salt – to taste
  9. Turmeric powder – a pinch
  10. Clarified butter – 2 tsp


  1. Crack the eggs into a small mixing bowl. Using a wire whisk the eggs until it becomes frothy.
  2. Mix in turmeric powder and salt, and beat well.
  3. Add onions, tomatoes, carrot, green chilies, cumin seeds and coriander leaves, and mix well.
  4. Heat a large non-stick pan greased lightly with clarified butter on a medium to high flame.
  5. Lower the flame and pour in the whisked egg mixture.
  6. Swirl the pan to ensure even spreading.
  7. Turn the flame from low to medium to high flame.
  8. Drizzle half of the leftover clarified butter over the egg mixture and cook until the bottom portion turns golden brown.
  9. Flip over and sprinkle rest of the clarified butter and cook for a minute more.
  10. Serve hot with ketchup.

  1. Eggs – 2, large
  2. Salt – to taste
  3. Cheddar cheese – ¼ cup, grated
  4. Butter – 1 tbsp
  5. Black pepper powder – 1 tsp, freshly ground


  1. Take a small mixing bowl and crack the eggs into it.
  2. Add pepper and salt. Using a whisk beat the mixture well.

  1. Eggs – 2, large
  2. Salt – to taste
  3. Whipped cream – 1 tbsp

  5. Fresh basil – 2 sprigs
  6. Cherry tomatoes – 6, finely sliced
  7. Cooking oil – 1 tsp

Make sure you prepare the omelet as thin as possible to get that crispiness. While pure, unsalted butter is preferred for that rich touch, the health conscious group can opt for olive oil.   2. Add cumin seeds and allow it to splutter.
  3. Add onions and green chili and sauté until onions turn golden brown.
  4. Add 1 tbsp coriander leaves and give a quick mix.
  5. Add tomatoes and cook until the mixture is semi dry.
  6. Mix in crumbled paneer and give a quick mix.
  7. Season with salt as desired.
  8. Add garam masala and rest of the coriander leaves and mix quickly.
