Did you ever notice a little twisted white string that is attached to the egg yolk? Do you find it gross?

Even I used to find it disgusting – a little inconspicuous string that floats around when you break an egg or that sometimes even hides beneath the yolk. Wherever it was hidden, I always felt that it was the chicken’s umbilical cord, and that grossed me out.

But, one fine day, I thought of doing some research and find out what it actually is. The answer stumped me.

The white strings are actually called chalazae, and there are two of them on each side of the yolk.

Their purpose is to act as an anchor and ensure the yolk remains at the center of the egg and the embryo is protected.

The presence of chalazae indicates the quality and freshness of the egg. The more noticeable the chalazae are, the fresher the eggs are. If the egg is old, you will notice that the chalazae will fade away soon and eventually disappear.

Sometimes, you may also notice blood spots along with the chalazae when you break an egg. These blood spots don’t indicate that that the egg is inedible. Those blood spots are caused by erupted blood vessels during the formation of the egg. However, they can be removed with the tip of a knife or spoon, and then you can eat the egg.
